Who doesn’t love a good fruit cobbler?
This Sunday it was cloudy, I had fruit in the freezer that just wasn’t making it into the smoothies it was intended for, and I had been meaning to make something sweet. So I went back to my roots and made the cobbler I grew up on with a simple base of 3 ingredients even though the tastiness of this recipe always impresses. A cup of flour, cup of sugar, and a cup of milk. As far as fruit, I used what I had on hand, which happened to be peaches and cranberries. Note, if you are using frozen or fresh fruit, I usually recommend adding juice, although you don’t have to, it amps up the flavor! Here is the recipe I used:
1 CUP SELF RISING FLOUR
1 CUP WHITE GRANULATED SUGAR
1 CUP ALMOND MILK (OR REGULAR MILK)
12 OZ FROZEN PEACHES
12 OZ FROZEN CRANBERRIES
1 CUP POM BLUEBERRY JUICE (NO SUGAR ADDED)
BUTTER (FOR THE BAKING DISH)
CINNAMON (TO MIX IN THE BATTER, AND TO DOUSE THE FRUIT)
INSTRUCTIONS:
Butter the bottom of a large baking baking dish (I used a 9×13), then spread fruit. Pour in the cup of juice. Add a generous amount of cinnamon (I usually give the mixture a good stir).

In a separate bowl, combine 1 cup of self rising flour, 1 cup of granulated white sugar, 1 cup of almond milk, and additional cinnamon. Then, pour evenly over the fruit mixture. It is important that you DO NOT STIR!
Put into a preheated oven at 375 degrees F. 35-40 minutes. The finished product was delicious! Make sure to let it cool, as all the juices and thicken up. This cobbler is great with many different fruits including mixed berry (one of our favorites), and the juice is totally optional, but adds a nice zing! You can also use canned fruit (such as canned peaches) in this recipe, and its still really yummy, but I personally opt for fresh or frozen fruit, which is way tastier.

We can worship God in everything that we do, from cleaning our home, to eating healthy, to making not so healthy (but oh so yummy) cobblers for our families and neighbors. His grace is found in every place in the lives of His children, and the kitchen is no exception! He is willing to meet you in your kitchen, and be acquainted with everything you do.
